The best salsa ever!!

Ok, girlies... as promised, here is the recipe for THE best salsa ever!! It is sort of spicy but not too much, if you don't eat a lot of spicy food you may want to try it with just 2 chile habaneros. It gets less spicy each day.


5 roma tomatoes (the softest you can find)

1/2 garlic clove


3 red chile habaneros


Knorr suiza (original, no fancy flavors please)



Roast the first three ingredients. I do it on a comal, but you can use any pan or in the oven. They have to be very charred so the tomatoes are cooked through. The habaneros will puff up when ready and the garlic has to be almost burnt.


Blend with a teaspoon of knorr suiza.


You can also substitute the chile habaneros for 32 chiles del monte (also know as chile piquín) They are the kind that I gave you Char for christmas. You don't have to roast these, just put in the blender as is.

Tzatziki Sauce (cucumber sauce) - YUMMY!

Mike and I went to our monthly dinner event. This month's theme...GREEK! my chicken...uh...not so good :( it was a bit dry, but the Tzatziki sauce received rave reviews. What's that? Oh, you want the recipe? Sure... here it is (serves 4, adjust as needed):

Ingredients:
1/2 cup seeded, diced cucumber
1 teaspoon kosher salt (I used seasalt since that is what I had)
1 cup plain yogurt
1/4 cup sour cream
1 tablespoon lemon juice
1/2 tablespoon rice vinegar
1 teaspoon olive oil
1 clove garlic, minced (I used a bit more, since I love garlic)
1 tablespoon chopped fresh dill
1/2 teaspoon Greek seasoning

Directions:
-In a small bowl, toss the shredded cucumber with 1 teaspoon kosher salt. Put in fridge for at least 5 mins (I had it in there for 20 mins because it took me so long to do the next step) :)
-In a medium bowl, mix the yogurt, sour cream , lemon juice, rice vinegar, and olive oil. Season with garlic, fresh dill, and Greek seasoning.
-Remove excess water from cucumber. (I used a paper towel and squeezed)
-Mix cucumber into sauce.
-Season to taste with salt and pepper (I didn't do this because it was already delicious)
-Refrigerate until ready to use.
