Tia margie, tio lalo, char, lalo, mike and I were at dinner the other night and we were talking about sombrero festival. We thought it would be fun for all the pachecos to run the sombrero festival 10k next year (2014). I can have shirts made for us. Who's in?

New member of the family
Nathan Matthew Nava
Born: June 8, 2011 @ 1:25pm
Weight: 7 lbs 11 oz
After 12.5 hours of labor, Nathan came into this world in dramatic fashion. A result of shoulder dystocia, he was in the NICU for 5 days. He is doing well with no signs of side effects from the delivery complication. Mike and I couldn't be happier. We feel blessed to have him in our lives and excited to introduce him to all the family!

Tzatziki Sauce (cucumber sauce) - YUMMY!
Ingredients:
1/2 cup seeded, diced cucumber
1 teaspoon kosher salt (I used seasalt since that is what I had)
1 cup plain yogurt
1/4 cup sour cream
1 tablespoon lemon juice
1/2 tablespoon rice vinegar
1 teaspoon olive oil
1 clove garlic, minced (I used a bit more, since I love garlic)
1 tablespoon chopped fresh dill
1/2 teaspoon Greek seasoning
Directions:
-In a small bowl, toss the shredded cucumber with 1 teaspoon kosher salt. Put in fridge for at least 5 mins (I had it in there for 20 mins because it took me so long to do the next step) :)
-In a medium bowl, mix the yogurt, sour cream , lemon juice, rice vinegar, and olive oil. Season with garlic, fresh dill, and Greek seasoning.
-Remove excess water from cucumber. (I used a paper towel and squeezed)
-Mix cucumber into sauce.
-Season to taste with salt and pepper (I didn't do this because it was already delicious)
-Refrigerate until ready to use.
I hope you like it as much as I did!!!

At the shower the girls promised they would be contributers to the blog; to keep them accountable & share my excitement I'm sharing this info with you.
So I hope you readers are excited to see what we post and I also hope other family members are inspired to post, comment or simply just read as well.
